2 days: the essentials
Day 1: a half-day guided walk through Fès el-Bali (Bab Bou Jeloud, Bou Inania madrasa, the Quaraouiyine from its doors, Nejjarine, the Chouara tannery), then an afternoon exploring on your own. Day 2: Fès el-Jdid and the Mellah, the Batha museum and Jnan Sbil gardens, sunset from the Marinid tombs.
3 days: add Volubilis and Meknes
Keep the two days above and add a full-day private trip to the Roman site of Volubilis, the hill town of Moulay Idriss Zerhoun and the imperial city of Meknes.
4 days or more: the Sahara or a slower pace
Add a 2–3 day desert tour to Merzouga (ending in Marrakech if you continue south), or stay put: a cooking class, a hammam, and time to get lost in the souks without an agenda.

Is one day in Fez enough?
One day gives a taste of the medina with a guide, but you will leave most of the city unseen. Two days is a comfortable minimum.
